No matter the many good choices and stunning styles for different cookware out there, you still can choose which one is the best by considering some factors.
The material from which a cookware is made of is perhaps a major factor that is often overlooked when selecting a new cookware. Most home cooks believe the need for more than just desires toward the proper equipment. In fact, they agree that it is essential to understand the differences between cookware materials so it is easier for you to decide what to buy and further on, will allow you to benefit from and keep your cookware long-lasting.
Another essential factor you should look for is weight. Your cookware should be adequately heavy to sit steadily on a burner yet light enough for easy lifting. Choose pots and pans with handles that stay cool without requiring potholders or mitts. One should also consider the amount of care required. Bear in mind that different cookware types involve different care and maintenance, and if you want to keep your cookware for a long time, then you should be ready to give extra time and care.
Stainless cookware is still the most used type. It is strong but light, does not corrode, resistant to wear and non-reactive to certain foods that it can be used for all sorts of cooking. It is said that stainless steel pans can make wonderful sauces. The only drawback is that stainless steel is a poor conductor of heat. It requires a thick and wide aluminum or copper base and sometimes along the sides of the cookware to make it more responsive to heat. Stainless steel cookware is easy to clean. It can be run through a dishwasher, or simply scraped with nylon pads in soap and water.
Non-stick material for a cookware is ideal for its less need of grease in cooking. Food sticks and burns less easily. A good nonstick finish is extremely smooth that you can rub your fingers back and forth along the surface slickly. The drawback is that heating nonstick pots and pans at high temperatures can generate a chemical compound that could melt the non-stick coating. It is also more difficult to brown or caramelize foods. To avoid scratching the surface, use only wooden, plastic or any coated utensils when cooking. Some cooks like non-stick pans for its easy cleanup, you can wipe the nonstick surface with a little amount of cooking oil on a paper towel and wipe off the excess oil. You can also wash it in hot soapy water, but never in a dishwasher.
Cast iron is probably the most economical but durable material. It provides a non-toxic cooking surface that heats evenly and quickly. Once heated, a cast iron cookware maintains the heat for a long time. Cast iron cookware is the best choice for browning, deep frying and slow cooking because it retains heat. The only problem is that cast iron cookware rusts and roughs when exposed to air, moisture and certain foods. Clean your cast iron after cooking while the pan is still hot, wipe with a paper towel or cloth, or a stiff nylon brush. To put off rust, eliminate any excess moisture from the surface and coat with oil before storing. Do not wash your cast iron with soap and water.
Aluminum cookware makes up more than half of the cookware now. Aside from its being less-expensive, aluminum conducts heat well. The obvious disadvantage is it reacts with food and it scratches easily. For these reasons, aluminum cookware is coated with stainless steel or anodized coating to have a harder exterior finish. Aluminum does not require any special care. Washing it in soapy water is enough. However, if the surface has anodized coating, be careful not to scratch the finish and avoid washing the cookware in a dishwasher.
Lined copper cookware is expensive but it is a good choice for many cooking methods. Copper is most-favored by international chefs for its ability to conduct heat uniformly and cooks food more evenly especially for top-of-range cooking where the food must be cooked at specifically controlled temperatures. Copper cookware cools down quickly when removed from heat. The only disadvantage is that copper cookware is not dishwasher-safe, nor can be left to air dry as this can cause spotting and they will have to be polished again and again. Since copper may interact with certain food, the cookware is lined with tin, silver or stainless steel to improve its qualities and protect the food. Copper cookware is delicate that requires subtle washing with soapy water.
When buying for a new cookware, the most sensible decision is to select the very best that you can afford. Just make sure you select wisely so you get what you pay for, and bear in mind that quality lasts. You would not want a cheap cookware that doesn’t seem to last for a week.
